Lazy Buñuelos





Yesterday morning while making Jon's lunch, he comes up to me and says, "Mom by the way I need you to make something for my heritage presentation"  I said " Ok when is it" Jon "tomorrow" Of course it is. "What should I make" Jon "I don't know something mexican" Oh gosh just stop talking ill think of something. Last year I made mini Flan cups they were a hit, but he had the same teacher again this year I decided I should probably make something different. I was talking to my mother in law and she said to try to make Buñuelos, I said that sounds good how do you make them.
Her version was 3 hour prep time, this mom did not have time for that I didn't get off work until 6 and still had to go to the grocery store to pick up some things. So I took a short cut and bought flour tortillas to fry, instead of making the dough from scratch and having it dry for 3 hours.

Recipe (I pretty much just eye balled everything, I try to pretend i'm a cool cook that way)
1 1/2c Coconut oil ( That's what I had, i'm sure any oil would be fine)
1c Sugar
1tbs Cinnamon ( A good chance I used more)
Flour tortillas

Start by heating the oil in a medium skillet on high heat.While that's heating up I started to cut the flour tortillas into triangles until I had about 35 triangles. Of course you can cut as many as you'd like,  Jon has 30 kids in his class the five extra were for any mistakes and tasting.
Time for the cinnamon sugar just combine the cinnamon and sugar (smells amazing). Than I dropped the triangle two at a time into the oil turning down the heat to medium. It takes about 10-15 seconds to bubble up the tortilla than I remove and immediately toss them into the cinnamon sugar give them a little shake to remove any excess sugar and place them on a plate (I try very hard not to eat one) and continue this until your all done.Enjoy!

Couple items items I have been eyeing recently. That Milani brow kit I cannot find anywhere at my local drugstores or its the wrong shade, I really want to give it a try.  New tote because its beach/ lake season and the strap to my other beach bag broke off this last time we went to the lake (over stuffed) Have any of you guys tried the Sephora Air brush foundation I really want to try it, I want something light for the hot summer days coming up. The ripped boyfriend jeans because why not. That coffee mug I want to see if that's something I can possibly diy myself using a sharping and than baking it, you can find how to's all over Pinterest.

Minnie Love


I fell for her tantrum at Target all I wanted to do was take her a cute picture with a few over sized stuffed animals and when we were all done. Cute picture uploaded to Instagram, I went to put the stuffed animals away and as soon as I grabbed Minnie, she said no Minnie. Uhhh ok, but Minnie has to go back to her friends and so the tantrum begins. There we were in the middle of Target and Juliana is crying at the top of her lungs to give Minnie back, I just wanted to hide behind a shelf I was so embarrassed. She has not done this to me before I gave in got her the Minnie. She was so exited when we left she was hugging Minnie the whole time it was so cute. 

When we move i'm taking a little break from working and focusing on school and Jon and Juliana. I cant wait these last two years working time has gone by so fast. They are growing up so fast I feel like i'm missing everything and I really hate that.

By the way this photo was taken with my new DSLR camera!! Finally I took the plunge for mothers day and bought the Nikon 3200, I heard its a very good camera for a first timer like myself just getting into photography. I was a bit over whelmed when I first took it out of the box I have so much to learn. I've been learning a lot of tips though from Pinterest and Click it up a Notch.

Pretty Spaces: Kid friendly Backyard

Hello, one of the main reasons we chose the house we bought, was because of the huge backyard. Oh the possibilities of the things we can do back there are endless. Starting with of course it replacing the fence, that should be done by next week before we move in. I'm still trying to decide what I want to do for the kids in the backyard, we were just going to buy a standard play ground slide, swings etc. but looking around at different blogs that quickly changed our minds. So for now we are still undecided, but below are some of the ideas that are floating around in our heads : )

What do you mean closed??

OK i'm just going to throw it out there i'm not really one to plan ahead. As much as I would love to plan way in advance and have the car nicely packed for a outing with Jon and Juliana (oh and Jon's best bud B.) I'm more of a oh that's sounds like a great idea throw a back pack full of I don't know what in the car and we're off. But oh wait T. is it ok if B. can go to this amazzzzzing place in Berkeley called Adventure play ground he would have soooo much fun.(T. of course he can) So now we're off cruising down hwy 24, 20 minutes later we see the big SF buildings in the distance. Kids know were almost there. Jon to B."Dude there's SF ugh we should have gone there instead, oh well this Adventure place will be so much more fun."

Finally we arrive, parking lot is looking kind of empty. Kids run out of the car to the entrance and they are closed. (Crap) I flash back trying to remember the last time we came it was a Tuesday, its Wednesday why are they closed. Than I remember it was also summer vacation ohhh right. Now they are only open Saturday and Sunday. Now what do we do we look around, and the beach is right there and a play ground. So we decide we are just going to make the best of it its a nice day out we're going to explore. Jon and B. go out by the water trying to find sea shells. Juliana decides she wants to find out whats running back and fourth between the bushes. Surprise there are squirrels everywhere big ones small ones, and they come right up to you and stand up wanting food is my guess. After being there around two hours we decide to call it a day, we go out for ice cream than take B. home. Everyone still had a fun time, i'm sure the ice cream had something to do with that.

Blurry picture but right before Juliana bursted into tears for Julian smearing cake on his moms face.

Last week Gisele started acting very strange and not her normal playful self at all. All she wanted to do was sleep wasn't eating and started vomitting. Julian took her to the vet, they said she had an infection and we had to give here daily shots at home and give her an IV (it was quite strange having to play nurse) so she can stay hydrated. I can finally say as of three days ago she seems all better. Back to her playful self playing with Sophie and Chloe, waking us up with her sweet kisses.
